    9 Fast-Growing Vegetables That Go From Seed to Table in Under 60 Days

    The typical home garden harvest timeline plant in May, wait three months, and harvest in August can test the patience of even dedicated gardeners. But many common vegetables reach harvestable maturity in under 60 days from seed, bringing fresh food to the table within weeks instead of months. These fast-maturing crops are especially valuable for beginning gardeners who need early success to stay motivated, for filling empty spaces between longer-season crops, for late-season plantings that need to beat the first fall frost, and for anyone who simply wants a quicker harvest.

    1. Radishes: 22 to 30 Days

    Radishes are the fastest vegetable from seed to table. Spring varieties such as Cherry Belle and French Breakfast can be ready to harvest in as little as 22 days under ideal conditions, including cool weather, steady moisture, and full sun.

    Their speed also makes radishes useful for marking rows of slower-germinating crops. Gardeners can sow radish seeds alongside carrot seeds, and the radishes will emerge within days to show the row while carrots take two to three weeks to appear. By the time the carrots need the space, the radishes have usually already been harvested.

    2. Lettuce: 30 to 45 Days (Leaf Varieties)

    Loose-leaf lettuce varieties can reach baby-leaf harvest size in about 30 days and full maturity in 40 to 45 days. The cut-and-come-again method allows gardeners to harvest from the same planting several times over three to four weeks.
